25 Days of Christmas Cookies: Lemon Gems
I did it; I judged a cookie by its look. Another fun recipe from the beloved Taste of Home cookie magazine; I only tried it because they looked so fun.
But. It's not only their charming looks that caused me to make them again. They are so different from any cookie I have ever had before. Don't make them if you don't love lemon, because it's an intense mouthful of bitter and sweet. And maybe bittersweet too if you consider the number you are eating.
Lemon Gems
3/4 cup butter, softened
1/2 cup confectioners' sugar
1 tablespoon grated lemon peel
1 cup all purpose flour
1/2 cup cornstarch
1/ 4 cup colored nonpareils
Lemon Icing
1 cup confectioners' sugar
2 tablespoons fresh lemon juice
1/2 teaspoon grated lemon peel
In a small bowl, cream the butter and confectioners' sugar until light and fluffy. Beat in lemon peel. Combine flour and cornstarch; gradually add to creamed mixture and mix well.
Form into 1 3/4 inch diameter roll; roll in the nonpareils. Optional: spilling half of these nasty little magnetic-seeming things all over your house.
Wrap in plastic; refrigerate for 2-3 hours, or until firm.
Unwrap and cut into 1/4 inch slices. Place one inch apart on ungreased baking sheets. Bake at 375 degrees for 9-11 minutes.
Cool on wire rack.
Combine icing ingredients in small bowl and spread over cookies. I find it easiest to turn them face down and ice them that way.
My mouth waters just looking at that lemon zest.
