25 Days of Christmas Cookies: Peppermint Bark Chocolate Cookies

Have you caught on to my guilty pleasure yet?

We're not done with the chocolate and peppermint marriage in my kitchen.  And it would seem that the cravings are evermore intense; I might be making up for lost peppermint ground due to not being able to consume serious amounts of peppermint mocha lattes this holiday season.

Babycake may walk out in the shape and/or color of a candy cane.

These were a brand new recipe.  I got the recipe from here; it may have been love at first taste.  And i may have had about seven.

Peppermint Bark Chocolate Cookies

  • 1 cup of butter

  • 3/4 cup of brown sugar

  • 3/4 cup of white granulated sugar

  • 1 large egg

  • 1 teaspoon of vanilla extract

  • 1 3/4 cups of all-purpose flour

  • 3/4 cup of unsweetened cocoa powder

  • 1/2 teaspoon of baking soda

  • 1/2 teaspoon of baking powder

  • Pinch of salt

  • 1 cup of peppermint bark, broken into little chip size pieces

Preheat oven to 350 degrees.

Cream the butter and sugars together; beat at medium speed for about two minutes.

Add the egg and vanilla until mixed thoroughly (scrap sides of the bowl often).

Mix together the flour, baking soda, baking powder, salt, and cocoa powder.  Add gradually to the butter mixture, taking care not to overmix.

Fold in the chopped peppermint bark.

Take small spoonfuls of the dough; roll into balls, and placed onto lightly greased baking sheet.  Bake for 10-11 minutes.  Remove from pan, and transfer to wire rack.

Try not to eat your weight in these.  Seriously, I dare you.
